A natural complete mix for preparation of great tasting gluten free breads. The gluten free mix is suitable for people allergic to gluten & egg.

Method:

  1. Mixing time (approx.): 2 mins slow in a whipping machine
  2. Dough temperature: 24° C - 26° C
  3. Scaling weight: 800 g in a mould
  4. Bulk fermentation: 120 min
  5. Again Mix the dough for 2min (approx.)
  6. Final proof: 30 – 40 mins under 75% humidity and temperature of 32° C
  7. Baking temperature: 230° C with falling temperature of 210° C
  8. Baking time: 50 mins (approx.) for 800 gms
