Method:
- Mixing time (approx.): 2 mins slow in a whipping machine
- Dough temperature: 24° C - 26° C
- Scaling weight: 800 g in a mould
- Bulk fermentation: 120 min
- Again Mix the dough for 2min (approx.)
- Final proof: 30 – 40 mins under 75% humidity and temperature of 32° C
- Baking temperature: 230° C with falling temperature of 210° C
- Baking time: 50 mins (approx.) for 800 gms
